Berry Upside Down Cakes
Microwave:
Remove plastic overwrap. Place on microwave safe dish right side up. Heat on high for 50 seconds. Remove from microwave and rest for 1 minute right side up. Invert onto plate, remove cup, and serve.
Conventional Oven:
Preheat oven to 350°F and remove the plastic overwrap. Place cake, right side up, in its cup on a baking sheet. Heat for 12-14 minutes. Let cake stand in cup for 1-2 minutes. Invert onto plate, remove cup, and serve.

The berry compote on top hits all the flavor notes. The cake is light and fluffy. Only complaint is the bottoms are a little crusty. I put a piece of foil on top halfway thru baking which seems to help keep the bottoms moister.
