Adding chili powder and lime juice to high-fiber cereal and almonds makes this healthy snack appetizer a zesty choice.


Chili-Corn Snack Mix
Recipe from 
Servings: Makes 8
Total Time: 15 mins
     Tbsp.  canola oil
     Tbsp.  lime juice
     tsp.  chili powder
     cups  toasted high-fiber corn cereal and/or crispy corn and rice cereal
     cup  tiny pretzel knots
    1/2  cup  whole almonds
    1/4  cup  dehydrated corn kernels
    1/4  cup  snipped dried apricots or whole dried cherries
In a large skillet heat oil, lime juice, and chili powder over medium heat 30 seconds. Add cereals, pretzels, and almonds. Cook 4 to 6 minutes or until cereal and almonds are very lightly browned, stirring frequently. Remove from heat. Stir in corn and apricots. Spread mixture on foil to cool. Makes 8 (1/2-cup) servings.
