This pancake, folded omelet-style over ham, cheese, sweet pepper, and pineapple, is quick to serve for breakfast, brunch, or dinner.


Breakfast Tacos

Servings: 10 pancake tacos

  •     Nonstick cooking spray
  •  teaspoons  margarine or butter
  • 1/3  cup  chopped celery
  • 1/3  cup  chopped green sweet pepper
  •  cup  shredded cheddar cheese (4 ounces)
  •  cup  diced fully cooked ham
  •  8-ounce can  crushed pineapple (juice pack), well drained, or 3/4 cup finely chopped apple
  • 1-1/3  cups  Buttermilk Pancake Mix (see Recipe Center)
  •  cup  water
  •    egg, slightly beaten
