Ingredients

1 - 15 ounce can black beans, rinsed and drained
1 1/2 - cups chopped, seeded cucumber (1 medium)
1/2 - cup chopped tomato (1 medium)
1/2 - cup sliced green onions (4)
1/4 - cup lime juice
1 - tablespoon snipped fresh cilantro
1 - tablespoon olive oil
1/2 - teaspoon ground cumin
1/8 - teaspoon salt
1/8 - teaspoon cayenne pepper


Directions
In a medium bowl combine beans, cucumber, tomato, green onions, lime juice, cilantro, oil, cumin, salt, and cayenne pepper. Cover and chill for 4 to 24 hours.


Use a slotted spoon to serve salsa over grilled bratwursts, pork, chicken, or salmon.
